冷颼颼冬天就是草莓的季節!濃郁的鮮奶油加上酸甜草莓的香氣,應該沒有人能抗拒它的魅力吧!

預備食材:

<蛋黃糊>

蛋黃3個

沙拉油6g

牛奶30g

鹽1小匙

低筋麵粉45g

步驟1

將低筋麵粉過篩備用,蛋黃和蛋白分開備用。

烤箱先用180度預熱10分左右

這個配方,看妳做的蛋糕捲大小⋯可以做9~12個,先剪9~12張小烘焙紙等下要包蛋糕捲備用。

步驟4

先做蛋黃糊~

將蛋黃、牛奶、油、香草精、鹽都加入調理盆內,攪拌均勻。

步驟6

打蛋白霜~

將蛋白打出粗泡,再分2次加入砂糖,用高速打發,打到蛋白霜能挺立狀態。

再分2次加入砂糖,用高速打發⋯

打到蛋白霜能挺立狀態,如上圖。

步驟7

將1/3的蛋白霜放入剛打好的蛋黃糊中,用切拌的方式輕輕攪拌均勻。(不要過度攪拌,以免消泡)

再將這麵糊倒入剩下的蛋白霜中,用切拌方式混合均勻。

完成後,將完成的麵糊裝入塑膠袋中,前端剪ㄧ小口,準備擠麵糊。

再將這麵糊倒入剩下的蛋白霜中⋯用切拌方式混合均勻。

步驟9

烤盤上放烘焙紙在烘焙紙上,擠出4個小圓麵糊,擠的時候,由中心往外畫,不要太薄,盡量擠均勻。烤箱用180度烤8~10分左右。

烤盤上放烘焙紙⋯

在烘焙紙上,擠出4個小圓麵糊⋯擠的時候,由中心往外畫,不要太薄哦,盡量擠均勻。

烤箱用180度烤8~10分左右(各家烤箱烤溫不同,再自行調整烤溫和時間) 不要烤過久哦,這款蛋糕口感是鬆軟的⋯烤太久會變硬。

步驟10

烤好的蛋糕,等蛋糕稍涼,即可用蛋糕鏟鏟起來,輕輕的對折,放入剛剪好的烘焙紙內。

打鮮奶油霜~

將鮮奶油 砂糖⋯放在調理盆內,調理盆放入ㄧ大調理盆內,下面放冰塊,用高速打發,這訣竅可幫助鮮奶油打發。鮮奶油是能挺立狀態。

打鮮奶油霜~ 將鮮奶油+砂糖⋯放在調理盆內,調理盆放入ㄧ大調理盆內,下面放冰塊⋯用高速打發,這訣竅可幫助鮮奶油打發。 這款蛋糕的鮮奶油霜要打到9分發,鮮奶油體是能挺立狀態。

步驟12

接下來,開始組合,裝飾蛋糕~

1.先在蛋糕捲內擠第一層鮮奶油。

2.第二層放切對半的草莓。

3.第三層再擠上鮮奶油。

4.第四層再點綴上草莓,灑上糖粉,完成!

蛋糕上再裝飾薄荷葉。
